I wanted to use up the pancakes in my fridge, and wanted something healthy, with fruits, yet tired of using frozen berries…

Flipping through Christine’s book 簡易食譜, and found the recipe for Apple Turnovers, I thought, wouldn’t it be great to “borrow” the apple pie filling recipe and use it with my pancakes.

  • Apple (medium size)    1 
  • Raisin (optional)
  • Brown Sugar                   1 TBS + 1 tsp
  • cinnamon powder     1/4 tsp
  • Lemon juice                 2 tsp
  • Lemon zest                   1/2 lemon (about 1/4 tsp)
  • water                              2 TBS
  • Salt
  • Butter
  • Corn Starch                   1 tsp
  • Water                            1 TBS

Cook the apple, sugar, cinnamon, lemon juice, lemon zest, water and salt until apple soften.

Then add a little bit butter (optional), and finally, mix with corn starch & water and then add raisin.

** The apple is not soft enough the last time I made it, can try cooking longer next time to a softer texture.
